Rajma Masala
Rajma, also known as kidney beans, is a popular ingredient in North Indian cuisine. Here's a simple and delicious recipe for rajma masala:
Ingredients:
1 cup dried rajma (kidney beans)
1 large onion, chopped
2 large tomatoes, chopped
1 1-inch piece of ginger, grated
3-4 cloves of garlic, minced
1-2 green chilies, chopped
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 teaspoon garam masala
2 tablespoons oil or ghee
Salt, to taste
Water, as needed
Chopped cilantro, for garnish
Instructions:
Rinse the dried rajma in cold water and soak them in enough water for at least 8 hours or overnight. Drain the water before using.
In a pressure cooker, heat oil or ghee over medium heat. Add cumin seeds and let them splutter.
Add chopped onion, grated ginger, minced garlic, and chopped green chilies. Saute until the onions turn golden brown.
Add chopped tomatoes, coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook until the tomatoes turn mushy.
Add the soaked rajma and enough water to cover them. Mix well and close the pressure cooker lid.
Cook on high heat until the first whistle, then reduce the heat to low and cook for 15-20 minutes.
Turn off the heat and let the pressure release naturally. Open the lid and check if the rajma is cooked through. If not, cook for a few more minutes.
Add garam masala and mix well. Garnish with chopped cilantro and serve hot with rice or roti.
