Dal Makhani: Ingredients: - 1 cup whole black lentils (sabut urad dal) - 1/4 cup kidney beans (rajma) - 3 cups water for pressure cooking - 1 onion, finely chopped - 1 tablespoon ginger garlic paste - 2-3 green chilies, slit - 2 tomatoes, pureed - 1 teaspoon red chili powder - 1 teaspoon turmeric powder - 1 teaspoon coriander powder - 1 teaspoon cumin powder - 1 teaspoon garam masala powder - 1/2 cup cream - Salt to taste - 2 tablespoons butter - 2 tablespoons chopped coriander leaves Instructions: 1. Rinse the lentils and kidney beans well, and soak them in water for at least 8 hours or overnight. 2. Drain the water and rinse the lentils and beans again. 3. Pressure cook the lentils and beans with 3 cups of water and a little salt for about 8-10 whistles or until they are soft and fully cooked. 4. Pan Fried Paneer Chili: Ingredients: 250g paneer, cut into cubes 1 green bell pepper, sliced 1 red bell pepper, sliced 1 onion, sliced 3-4 garlic cloves, minced 1-inch ginger, grated 2 green chilies, chopped 2 tbsp corn flour 2 tbsp oil Salt to taste 1 tsp black pepper powder 1 tbsp soy sauce 1 tbsp tomato ketchup 1 tbsp chili sauce 1 tsp vinegar Spring onions, chopped for garnishing Instructions: In a bowl, add corn flour and paneer cubes. Toss until paneer cubes are coated well. In a pan, heat oil over medium-high heat. Add paneer cubes and fry until golden brown on all sides. Remove from the pan and keep it aside. In the same pan, add sliced onions, minced garlic, grated ginger, and chopped green chilies. Saute for a few minutes until the onions turn translucent. Add sliced bell peppers and saute for 2-3 minutes until they are slightly tender. Add soy sauce, tomato ketchup, chili sauce, vinegar, salt, and black pepper powder. Mix well.
